牛奶中大约85%的蛋白质为酪蛋白,牛奶在去除脂肪和酪蛋白后即乳清,其中除含免疫球蛋白外,还含有其他小分子蛋白质等成分。许多学者对牛奶与龋病的关系作了大量研究,已经证实酪蛋白有抗龋作用。但乳清增强GTF活性的确切机制仍不清楚,推测与乳清中的磷脂有关[5]。被动免疫防龋需要解决的关键问题是如何经济地获得大量特异性抗体,牛奶是世界范围内普遍被人们消费的营养品,其来源广,产量高,消费方便,虽然Loimaranta和我们的研究显示乳清能增强GTF的活性,但将牛奶作为被动免疫的载体仍然是可以考虑的途径之一。
